Whole Wheat Muffins with Vegetables


Saturday is for baking. I love how the house smells on Saturday. To be honest, I made these muffins with the ingredients that I had at home. I wanted a savory muffin with some vegetables, olives and spices and the result was super delicious.

Ingredients:
2 and 1/2 cups whole wheat flour
1 teaspoon baking powder
1 green pepper, sliced in tiny pieces
2 spring onions , diced
3 tablespoons olive oil
4-5 olives, cut in small pieces
some oregano
salt and pepper
1 and 1/2 cup water


Combine the flour with the baking powder. Add the pepper, spring onions and olives. Add the spices. Gradually add the olive and the water and mix everything well. Pour the batter into muffins molds. Sprinkle some olives on top.
Bake at 170 C (300 F) for 15-20 minutes.

Паштета од ореви / Walnut Pate

Кога се работи за здрава храна најмногу грешиме со ужинките. Нема сигурно да седнеме за ручек и да јадеме нешто што не е толку здраво, ама грешиме кога грицкаме сѐ и сешто помеѓу оброци. Еве една здрава паштета од ореви која ќе ви стане омилена. На лепче, на двопек, па дури и како мезе без никаков додаток. Превкусна е. Јас правам поголема количина, па во секое време има во фрижидер.

Потребни состојки:
3/4 чаша мелени ореви
3/4 чаша презла
1/4 чаша семки од сончоглед
3 лажици сенф
4 чешниња лук
малку солмалку 
црн пипер
1-2 лажици лимoнов сок
топла вода по потреба
Сите состојки се мешаат во блендер и се додава вода по потреба.
Ете толку е лесно.
Ако сакате можете да ставите парче авокадо или домат, но и самата паштета е доволно вкусна.



When it comes about healthy eating I think we all eat unhealthy things as snacks. We don't usually sit for lunch and dinner and eat unhealthy food intentionally, but when we need a snack we grab a packet of crisps or something like that.
This walnut pate is the perfect option for a snack. Spread on some toast or cracker. It's delicious, healthy and so easy to make. I make more, so I always have some in the fridge.
For this pate you will need:

  • 3/4 cup walnuts (ground)
  • 3/4 cup bread crumbs
  • 1/4 cup sunflower seeds
  • 2 tablespoons mustard
  • 4 cloves of garlic (minced)
  • some salt
  • some hot water
Mix all the ingredients in a blender. Add some of the hot water until you get the pate consistency.
And that's all. You have a healthy and delicious snack. You can top it with some avocado if you like.

Еве едно јадење кое е и здраво и хранливо и вкусно. Шпагети со сос од авокадо. Го сакам авокадото и поради хранливоста и поради тоа што може да се вклопи во секаква ситуација. Убаво е со лукче, со маслинка, а се прават и прекрасни чоколадни рецепти кои во основа имаат авокадо.

Да се вратам на шпагетите. Превусни се, а се готови за 15 минути.

Чорба со карфиол / Cauliflower Soup

Не можев да верувам дека карфиолот е толку вкусен во чорба. Толку е вкусен сам за себе што немаше потреба од зачини, само малку магдонос, сол и црн пипер.

Состојки:

  • 1 карфиол
  • 3 лажици гриз
  • вода
  • сол
  • магдонос (сув)
  • црн пипер

Ставете го карфиолот во тенџере и покријте го со вода. Можете веднаш да ги додадете зачините. Варете се додека не омекне карфиолот. Тргнете го тенџерето од шпоретот и со лажица распарчете го карфиолот. Вратете го на оган и додадете го гризот. Гответе уште 5-10 минути.

Cauliflower Soup!

Ingredients:
  • 1 cauliflower
  • 3 tablespoons semolina
  • water
  • parsley (dried)
  • salt
  • black pepper
Put the cauliflower in a pot and cover it with water. Add all the spices. Boil it until the cauliflower is soft. Remove the pot from the heat and slice the cauliflower in the pot. Add the semolina and return the pot to the cooker. Boil for 10 more minutes.

Колач од овес и јаболка / Oatcake with apples



Ќе помислите - овес како овес, ама верувајте дека колачов е превкусен. Одличен е за десерт и како доручек. Мој предлог за сите што си постат или сакаат да се хранат здраво. Без масло и без никакви млечни производи или јајца. Додека се сетив да направам фотографии од исечени парчиња веќе немаше. Тоа нека ви каже колку е вкусен.

Состојки:
  • 3 јаболка
  • 400 мл вода
  • 3 лажици мед
  • малку цимет
  • 200 грама овес
  • 5-6 јатки ореви, толчени
  • 50 грама брусница


Излупете ги јаболката и ставете ги со водата во тенџерче да се сварат. Додека се варат во водата додадете го медот и циметот. Тргнете го тенџерчето од шпоретот да се излади малку.
Изблендирајте ги јаболката заедно со водата во која се вареа. Во друг сад ставете го овесот, оревите и брусницата и додадете ја кашата од јаболка. Се убаво измешајте.

Тавчето за печење обложете го со хартија и турете ја смесата. 
Печете на 180 степени, 35 минути.


An oatcake that's delicious, healthy and easy to make. It's a perfect dessert or as a breakfast. You can add any dry fruits or seeds that you like, I chose the oat-apple combination.

Ingredients:
  • 3 apples
  • 2 cups of water
  • 3 tablespoons honey
  • some cinnamon
  • 200 grams (1 cup) oats
  • some walnuts 
  • 50 grams (1/4 cup ) red huckleberries, dried
Peel the apples and boil them for 5-10 minutes. Add some cinnamon and honey to the apples.
Let the apples cool for a couple of minutes and then mix them in blender with the water in which they were boiled.
In a separate bowl mix the oats with the huckleberries and walnuts. Add the apple mixture to the oats and mix everything well.
Cover a baking pan with baking paper and pour the mixture,
Bake at 180 C (360 F) for 35 minutes.

I love this time of the year when our gardens are full of tasty tomatoes, peppers, cucumbers. A salad made of fresh homegrown vegetables is the best meal in summer. We have cherry tomatoes in our garden so I wanted to make something simple and tasty, and that's how this recipe came out. Tomatoes and olive oil, you cannot make a mistake with them. This bruschetta is a real treat for your taste buds. You can serve it as a starter, appetizer or even as a main meal if you prefer light food during the summer, as I do.
