Eggplant Spread
This Mediterranean eggplant spread recipe is healthy and delicious. Perfect for these hot summer days when you want something quick and easy to make.
Ingredients:
- 1 big eggplant
- 4 cloves of garlic
- 4 tablespoons sesame butter (tahini)
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon oregano

Whole Wheat Muffins with Vegetables
Saturday is for baking. I love how the house smells on Saturday. To be honest, I made these muffins with the ingredients that I had at home. I wanted a savory muffin with some vegetables, olives and spices and the result was super delicious.
Ingredients:
2 and 1/2 cups whole wheat flour
1 teaspoon baking powder
1 green pepper, sliced in tiny pieces
2 spring onions , diced
3 tablespoons olive oil
4-5 olives, cut in small pieces
some oregano
salt and pepper
1 and 1/2 cup water
Combine the flour with the baking powder. Add the pepper, spring onions and olives. Add the spices. Gradually add the olive and the water and mix everything well. Pour the batter into muffins molds. Sprinkle some olives on top.
Bake at 170 C (300 F) for 15-20 minutes.
