Ingredients
For the pasta dough
- 2 cups flour
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon olive oil
- 1 1/2 tablespoon water
For the filling
- 400 grams ground meat
- 1 big onion
- 2 cloves garlic
- some salt
- spices
First mix the flour and salt together and put the mixture on the working surface. Make a well in the center of the flour. Add the eggs and oil in the well and combine the flour and eggs together. Knead and gradually add warm water, enough to make a nice dough. Let the dough rest for 15 minutes.
I the meantime you can make the filling. Slice the onion and put it in a frying pan with some oil. Fry until golden brown and then add the meat, the garlic (minced) and any spices you like. I added some tomato sauce too, just a little.
Divide the pasta into fourths. Roll one portion to 1/2 inch thickness (1 cm). Then place rounded teaspoons of the filling, 2 cm apart, onto one half of the pasta sheet. Brush around the filling with water to moisten. Fold the pasta over and press down to seal. Then cut into squares with a pastry wheel. Repeat with the remaining dough and filling.
In my grandad's cookbook the ravioli were cooked in chicken broth, but I used water. So, you bring water to boil, add some salt and put the ravioli in it. They are ready when they start floating on the top.
You can serve them with any sauce you like. I used some sour creme and some dill.
