Creamy Mushroom Risotto

I want to share with you one of my favorite healthy and delicious recipes. Risotto with brown rice and oyster mushrooms. I can eat this dish every day, literally. It's so delicious and full of all the nutritious ingredients that our body needs. And, above all, it's so easy to make.
For this risotto you will need:
200 grams oyster mushrooms
1 onion
1 cup brown rice
2 cups water
3 tablespoons olive oil
salt and pepper to taste
1/2 teaspoon curry
some soya sauce

First soak the rice in warm water for about 20 minutes. Heat the olive oil in a pan and add the diced onion. When the onion becomes translucent add the sliced mushrooms and the rice.

 Stir-fry everything for about five minutes and then add some salt, pepper and the curry. Pour the water and let it cook on medium heat until the water is absorbed and the rice is cooked. About 20 minutes.
Add some soya sauce and serve it warm.
