Cream Cheese Croissants

Cream Cheese Croissants

Sometimes I wake up with an idea for a recipe and can't stop thinking about it until I try what I have imagined in my head. Cream Cheese Croissants. The name alone is tasty and inviting. This was the first time I was making croissant dough and I can say it wasn't bad at all. These croissants are crispy, tender and creamy at the same time. And sooo tasty.

Ingredients (for about 14 croissants) :
  • 300 grams (2 and 1/2 cup ) white flour
  • 100 grams (1 cup )whole wheat flour
  • 1 egg
  • 225 ml ( 1 and 1/2 cup) milk
  • 150 grams (3/4 cup) butter
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • dry yeast 2 teaspoons
  • 200 grams (1 cup) cream cheese
  • some dry basil

We are used to eating crepes with jam or honey, but every time we have them at home I take one and have it with cheese.  That's why when I saw this recipe in the book I knew it had to be the next on the list. I made a slight change, though. I added some basil. I love the basil-cheese combination. I couldn't help it :) And the good thing about this recipe is that the longer it stays in the fridge the tastier it is.For this recipe you will need:

Палачинки со шунка и фета сирење / Ham and Feta Cheese Crepes


Навикнати сме да јадеме палачинки со мед или џем, но секогаш кога се прават дома, крадам една-две за да си каснам со сирење. Кога го видов рецептов во книгата на дедо ми знаев дека мора да се проба. Единствена измена која ја направив во рецептот е тоа што додадов босилек во тестото за палачинки. Знаеме колку е комбинацијата босилек-сирење совршена. Колку повеќе стојат палачинкиве, толку се подобри. Па ќе си имате и за доручек за наредниот ден.


Состојки:
За палачинките

  • 3 јајца
  • 2/3 филџан вода
  • 2/3 филџан млеко
  • 15 лажици брашно
  • 1/2 лажиче сол
  •  2 лажици масло (и малку за пржење)
  • малку босилек, сув или свеж
За филот
  • 500 грама фета сирење
  • 3 лажици павлака
  • 200 грама шунка (изрендана)
  • 2 јајца
За од горе:
  • 1/2 филџан млеко
  • 1 лажица павлака
  • 2 јајца


Палачинките се прават на класичен начин. Избијте ги јајцата убаво и додадете ги другите состојки. Измешајте убаво се. Во тавче ставете масло и згрејте го. Пржете ја секоја палачинка од двете страни. Доколку ви се гледа смесата густа додадете си вода или млеко.



За филот, избијте ги јајцата и додадете им ги сирењето, павлаката и се убаво измешајте. На крај додатете ја шунката и измешајте со лажица. 
Тркалезното плехче намачкајте го со масло. Ставете една палачинка на дното, па од филот, па наредната. Така се додека не се потрошат и палачинките и филот.
За преливот, избијте ги јајцата со млекот и павлаката и турете ја смесата од горе на палачинките.

Печете на 180 степени, околу 35 минути.

For the crepes:

  • 2/3 cup milk
  • 15 tablespoons flour
  • 1/2 teaspoon salt
  • 2 tablespoons oil ( and some for frying)
  • some fresh basil leaves
For the filling:
  • 500 grams (2 cups) white cheese
  • 3 tablespoons cream cheese
  • 200 grams ham
  • 2 eggs
For the topping:
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 1 tablespoon cream cheese
  • 2 eggs

First beat the eggs and slowly add the flour, water, milk, salt and oil. Add the sliced basil leaves and mix well. The batter shouldn't be too thick so you may need to add some water or milk.
Fry the crepes in the usual way. In a frying pan pour from the batter enough to cover the pan. Fry on both sides. Repeat with the remaining batter and grease the pan if it is needed.
For the filling mix the shredded cheese with the cream cheese and the ham. Beat the eggs and add them to the cheese mixture.


Now, let's make the topping. Beat the eggs, add the milk, the cheese and the cream cheese and mix well.
Take one crepe and place it on a greased baking pan, put some of the filling and then another crepe. As if you were making a cake with many layers. When you use all the crepes, pour the topping on top and put it in the oven.
Bake for 40 minutes at 200 degrees.

Light, airy cheese puffs..... that's always a good idea. I got the idea to make this recipe while on holiday in Greece this summer. The fried cheese balls are part of the Greek cuisine and they make them very often. I don't know if I have mentioned, but I love Greek food. Starting with the olive oil, the gyro and everything else :)

Vegan Cashew Cheese

I could leave without meat, but I couldn't live without cheese. So, during the Great Lent the thing I miss the most is cheese. In pasta, in salad, or just cheese. So when I found a recipe on the internet for a vegan cheese I didn't think twice to try it. And the result is incredible. I think I will continue to make this cheese even when it's not a Lent time. You can use it as cream cheese, or you can leave it in the fridge for 2 days and use it as regular cheese.

Лазања со моцарела и спанаќ / Mozzarella and Spinach Lasagna


Рецептов не е од книгата на дедо ми, но сигурна сум дека би му се допаднал. Веќе ја забележавте сигурно мојата опседнатост со спанаќ. Посебно во комбинација со сирење, кисело млеко, павлака. Лазањава со спанаќ ми е десет пати поубава од таа со месо. Не ни правам со месо откатко ја пробав оваа. Моцарелата ја прави целата приказна совршена.

Состојки:

  • 500 грама лазања
  • 500 грама спанаќ
  • 250 грама моцарела
  • 250 грама урда (или рикота ако сакате да е уште повусно)
  • 100 грама фета сирење
  • 100 грама кашкавал за од горе
  • 1 чешне лук
  • малку сол и бибер

За бешамелот:

  • 50 грама путер
  • 4 лажици брашно
  • 750 мл млеко
  • 1 лажиче сенф
  • малку сол и бибер


Mozzarella and Spinach Lasagna

Ставете малку масло во тава и загрејте го. Испржете го лукчето и додадете го исецканиот спанаќ. Нека се пржат неколку минути. Зачинете со сол и бибер и додадете ја урдата и фета сирењето и измешајте убаво. Тргнете го од шпоретот.

За бешамелот, загрејте го путерот и постепено додавајте го брашното, мешајќи постојано. Додадете го топлото млеко, малку по малку и се убаво промешајте. Додадете го сенфот и зачините. Оставете го настрана да се излади 10 минути.

Покријте ја тавата во која ќе печите со лазањи, врз нив ставете една третина од бешамелот и половина од смесата со спанаќ. Од горе ставете кругчиња моцарела. Повторете го истото уште еднаш. Завршете со лазањи најгоре премачкани со бешамел.

Печете на 180 степени, 40 минути. Покријте ја лазањата со пармезан или кашкавал и вратете ја тавата во рерна уште 10 минути.

Mozzarella and Spinach Lasagna

Not a recipe from my Grandad's Cookbook but I'm sure he would have liked it. It's so tasty I had to share it with you. With plenty of spinach and ricotta , this is the most delicious lasagna I have ever tried. I don't want to hear about meat lasagna anymore. The mozzarella makes it cheesy and perfect.Ingredients:
  • 500 grams lasagna (17 oz)
  • 500 grams spinach (2 cups)
  • 250 grams mozzarella cheese (1 cup)
  • 250 grams ricotta cheese (1 cup)
  • 100 grams feta cheese (1/2 cup)
  • 1 clove of garlic
  • some salt and pepper

For the bechamel sauce (White sauce)
  • 50 grams butter (1/4 cup)
  • 4 tablespoons flour
  • 750 ml milk (3 cups)
  • 1 teaspoon mustard
  • some salt and pepper
Put some oil in a pan and heat it. Fry the minced garlic and then gradually add the sliced spinach. Let it fry for a couple of minutes. Add the salt and pepper and the ricotta cheese and feta cheese and mix everything well. Put the spinach mixture aside.

For the white sauce, heat the butter and gradually add the flour mixing constantly. Add the warm milk little by little and mix everything well. Add the mustard and the spices. Set it aside to cool for 10 minutes.

Cover the lasagna pan with lasagna noodles, spread one third of the white sauce and one half of the spinach mixture. Put slices of the mozzarella cheese on top of the spinach mixture. Repeat it again. Finish with lasagna noodles and white sauce on top.

Bake at 180 degrees celsius for 40 minutes. Cover the lasagna with Parmesan cheese, or any other cheese you like and return it in the oven for additional 10 minutes.

Stale-Bread Pizza

I don't like throwing bread away . Even when it's very old I take it to the balcony so the birds can eat it. This is a great recipe for when you have some bread that is a couple of days old, and, of course, for when you don't feel like making the pizza dough and still would like some pizza taste :)

Piroshky Made of Crepes


This is a recipe from the Russian cuisine. It can be served as a starter or (as I like it) as a delicious breakfast. Is there any better way to start the day than with these warm cheesy pies. I made some changes to the recipe. For example I added some basil in the cheese and some Parmesan in the eggs. In time you will come up with you own favorite version. Anyway they are tasty and very easy to make.
