Is there a better way to start the day than with this delicious cheese muffins? They were on my mind from the moment I woke up this morning. The spring onion goes so well with the cheese. This is the perfect weekend breakfast and it's ready in no time.
Ingredients:
2 and 1/2 cup flour
1 teaspoon baking powder
1/2 cup cheese
2 spring onions , diced
3 tablespoons olive oil
1 egg
1 cup milk, or yoghurt
Combine the flour and the baking powder. In a separate bowl whisk the egg with the milk and the olive oil. Pour the egg mixture into the flour and mix everything well. Add the spring onions and the cheese. Be gentle after you add the cheese since you want to feel the cheese when you are eating the muffin.
Bake at 170 C (300 F) for 15-20 minutes.
