Piroshky Made of Crepes


This is a recipe from the Russian cuisine. It can be served as a starter or (as I like it) as a delicious breakfast. Is there any better way to start the day than with these warm cheesy pies. I made some changes to the recipe. For example I added some basil in the cheese and some Parmesan in the eggs. In time you will come up with you own favorite version. Anyway they are tasty and very easy to make.


You need:
  • 2 eggs
  • 7 tablespoons flour
  • some salt
  • 1 cup of milk
  • 3 tablespoons oil
  • 2 cups shredded cheese
  • some basil
  • some Parmesan 
  • some bread crumbs and an egg for frying
First make the crepes. Beat the eggs first. Then add the flour spoon by spoon. Pour in the oil and add the salt. The batter shouldn't be too thick so you may need to add some water or milk. Fry the crepes in the usual way. In a frying pan pour from the batter enough to cover the pan. Fry on both sides. Repeat with the remaining batter and grease the pan if it is needed.
When they are ready make the filling. It's very simple. Just take the cheese and mix it with some basil (fresh or dry).


Take one crepe and put one teaspoon of the cheese in the middle of it. Fold two opposite sides of the crepe (like and envelope)  then take the third side and roll it. At the end of the crepe put some egg (beaten) so the crepe won't open while it is being fried. Repeat these with all the crepes.


Dip the Piroshky in beaten egg (with some Parmesan in it) and in bread crumbs. Fry them on medium heat until golden brown on both sides.
I like them with white cheese and a cup of tea :)
