Orange Bundt Cake

The perfect winter dessert. A bundt cake with chocolate and orange juice. I make this dessert often and everyone loves it. You can add some dried fruit or nuts, but I think it's perfect the way it is.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1/2 cup cocoa powder
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • orange zest (from 1 orange)
  • 1/2 cup chocolate (melted) + 1/2 cup for the frosting
  • 1/2 cup extra virgin olive oil
  • juice from 1 orange
  • 1/2 cup almond milk (I used rice milk)
  • 1 cup boiling water

Preheat the oven to 350 degrees F (180 degrees C). Grease the baking pan with some oil.
In a large boil add the flour, baking powder, soda, cocoa powder, orange zest and salt.

In a separate bowl mix together the sugar, vanilla, chocolate, orange juice, olive oil, milk and water. Combine everything well and add this mixture to the flour mixture.
Pour into the pan and bake for 25 minutes.
