This year I feel like I am not yet prepared for winter. Like I didn't have enough summer or fall. I miss the sun. Cold weather like this asks for some comforting food. I really love soups, especially in winter. This fish soup is full of flavors. Simple recipe for an extraordinary result. Try it and you will see it yourself.
Ingredients:
- 500 grams (17 oz) boneless hake fish fillet, or any fish you like
- 1 leek, sliced in thin pieces
- some oil for frying
- 1 liter (about 4 cups) water
- some dried oregano
- some dried parsley
- salt and pepper
- 3 tablespoons flour
Put the fish in a pot with water, and cook it until the fish is cooked and tender, about 20 minutes.
Slice the leek in thin pieces. Heat some oil in a frying pan and fry the leek for about ten minutes. Add the fish and fry it with the leek just one minute.
Pour one liter of water. Now you can add all the spices. Let the soup cook at low heat for about 20 minutes.
Mix the flour with 5 tablespoons of cold water, and add it to the soup, so it becomes thicker.
Serve with some fresh parsley on top.
