Spinach Casserole

I love spinach with lamb meat. I think that combination is absolutely perfect. But this vegan version is also tasty. It's easy to make, and it doesn't ask for a lot of planning ahead. A simple spring dish.


  • 500 grams spinach (18 oz)
  • 3 onions
  • 2 cups of rice
  • 1 vegetable stock cube 
  • 2 carrot
  • 1 teaspoon red pepper
  • some oil
  • some salt
  • some black pepper
Slice the onions and the carrots and fry them for a couple of minutes. When the onion is soft add the sliced spinach and the spices. 
Boil the rice in water and when it is cooked and soft add it to the spinach. Take the stock cube and dissolve it in 2 cups of warm water, and then add the water to the spinach mixture. Pour the spinach mixture in a baking pan. Bake for 20 minutes at 250 degrees C (480 F)
