The tastiest lentil soup I have tried. Delicious! Completely vegan, without dairy products, even without oil. And it's a very quick recipe. You can make it when you don't know what to cook for lunch, and you don't want to stay in the kitchen all day.
Ingredients:
- 2 carrots
- 300 grams (10 oz) red lentils
- 1 onion
- 2 green peppers
- 2 cloves of garlic
- 100 ml (1/2 cup) tomato sauce
- some salt
- 1/2 teaspoon cumin
- some black pepper
- 1 teaspoon curry
Put the lentil in a pot, together with the sliced carrots, onion, pepper and garlic. Add 3 cups of water, and let it boil for about 20 minutes. Take out the vegetables, mash them and return them to the lentil together with the tomato sauce and the spices. Let it boil for 10 more minutes so everything is well combined.
Serve with some parsley and enjoy your healthy and quick lunch.
