Veggie Chocolate Bundt Cake

I've been sitting in front of the computer trying to to describe this extraordinary chocolate cake for a while, and I can't find the words. It's magical. While you are eating it you have a feeling that you have entered some kind of a fairy tale. I'm not exaggerating. You simply must try this recipe!!!

Ingredients:
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1/2 cup cocoa powder
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup chocolate (melted) + 1/2 cup for the frosting
  • 1/2 cup extra virgin olive oil
  • 1 cup almond milk (I used rice milk)
  • 1 cup boiling water
Preheat the oven to 350 degreees F (180 degrees C). Grease the baking pan with some oil.
In a large boil add the flour, baking powder, soda, cocoa powder and salt.
In a separate bowl mix together the sugar, vanilla, chocolate, olive oil, milk and water. Combine everything well and add this mixture to the flour mixture.
Pour into the pan and bake for 25 minutes.

For the frosting, in a small bowl combine the melted chocolate and some olive oil. Drizzle over the cake. 
One of the best chocolate cakes I've tried. And is all veggie.
