My favorite food especially during the Great Lent. I could eat guacamole every day, literally. On a piece of toast, with some olives....delicious

  • 2 avocados
  • 2 tablespoons lemon juice
  • 2 cloves of garlic
  • 2 spring onions
  • 1 green pepper
  • 1 bigger or 2 smaller tomatoes
  • 2 tablespoons coriander (fresh or dried), or parsley or both
  • some salt

Peel the avocado and using a potato masher add the lemon juice to the avocado. Add the coriander, the garlic (minced), and salt and mash everything well.
Slice the tomatoes, peppers and onions and fold them into the avocado mixture. You can use a food processor for the vegetables and the guacamole will be smoother. It depends on your taste.

Put it in the fridge for an hour (if you can wait that long), and enjoy!
