Simple Mediterranean Recipe, tasty and light. It's easy to make and full of healthy nutrients. A guilt-free meal.
Ingredients:
- 1 onion
- 2-3 zucchini
- 200 grams (7 oz) ground meat
- 150 grams (5 oz) rice
- 1 carrot
- 1 tomato
- dry parsley
- oregano
- salt
- black pepper
- oil for frying
Remove the top of the zucchini and slice each zucchini in halves or thirds. Hollow out the zucchini to make place for the meat filling. Keep the zucchini cores because you are going to use them in the filling. Dice the onion and shred the carrot. Heat some oil in a pan and fry the onion with the carrot and the zucchini cores. When the onion is golden brown add the meat and fry for 5 minutes. Add the rice and the spices and fry everything for a couple more minutes.
Fill each of the zucchini with the meat filling. Place the zucchini in a baking pan. Slice the tomato and place one slice on top of each zucchini. Pour 2 glasses of water in the baking pan.
Bake at 400 F, for about 45 minutes, or until the water has evaporated and the rice is cooked.
It goes perfectly well with Tzatziki dip.
