Chocolate Cheesecake in a Glass

No-bake, easy to make and so delicious. It was ready in ten minutes and gone in one. You simply have to try it.

Ingredients (for 3 glasses)

For the crust

  • 50 grams biscuits (ground, pulse them in a food processor until ground)
  • 2 tablespoons unsalted butter (melted)
For the cheesecake filling:
  • 200 grams cream cheese
  • 50 grams sugar
  • 200 ml whipped cream
  • 100 grams milk chocolate (melted)

Instructions

In a medium bowl mix the biscuits and the butter. Mix until the biscuits are moistened. Divide them between the three glasses. Put about 2 tablespoons of the biscuits in each glass and press them with a spoon. You can divide the crust in two layers, as I did, in which case you need to plan to have enough biscuits for  both layers. Also, I left some crumbs to have for the topping.

For the filling, whisk together the cheese and sugar until well combined. Add the melted chocolate to the cheese and mix everything well. If you want you can add one teaspoon of cocoa powder at this point. Whisk  the whipped cream in a separate bowl and then using a spatula fold it gently into the chocolate mixture. It's important to leave the air inside. You can save some of the whipped cream for the topping.

Evenly spoon the cheese filling into the glasses. If you decide to go with two layers of crust you need to plan to have enough filling for both layers.
Top with some biscuit crumbs and some whipped cream, or simply anything you like.
