Roasted Mackerel Fish and Potato Salad


Roasted fish with fresh potato salad is one of my favorite meals. Not many people like Mackerel Fish because it has strong taste, but I love it, especially roasted with some lemon, parsley and garlic.
Ingredients for the salad
4-5 potatoes
3-4 spring onions, or 1 regular onion
some olive oil
some apple vinegar
salt to taste


Boil the potatoes until they are cooked. Cut them in circles. Place one row of potatoes in a bowl, put some of the onion (diced), some oil, vinegar and salt. Then another row of potatoes, onion, oil, vinegar and salt. Continue until you have no more potatoes. You can top the salad with some fresh parsley.
For the fish
3 Mackerel fish , scaled, gutted, gills removed
some parsley
3-4 gloves of garlic
1 lemon
some rosemary, fresh or dried
some olive oil
salt and pepper



First make a marinade with olive oil, parsley, the minced garlic, rosemary, juice from one lemon, some salt and pepper.
Prepare the baking pan, oiled. Soak each fish in the marinade and place it in the baking pan. Do the same with all the fish. Pour the remaining marinade over the fish. Cover the pan with some foil and leave the fish in the fridge to absorb the marinade for at least an hour, the longer, the better.
After an hour, bake the fish at 150 degrees C, for 25 minutes without removing the foil. Remove the foil and bake for five more minutes.
It goes so well with some red wine.
