Pumpkin Preserves

Winter preparation includes pumpkin jams, preserves... Pumpkin in any form keeps you warm when it's cold. This recipe is something I've always wanted to try. Pumpkin with sugar, some lemon and walnuts. It's perfect combination of tastes.

You need
  • 1 kg pumpkin
  • 1 kg sugar
  • 1 lemon
  • 100 grams walnuts
  • 200 ml water
  • some ice cold water with ice

Peel the pumpkin and cut it in small pieces. Put the pumpkin in ice cold water and add some ice. Leave like that for at leas 1 hour, or until the pumpkin is firm.
Put the water and sugar in a pot and bring it to boil. Cook it until it becomes thick sorbet.
Now it's time to add the pumpkin. You cook the pumpkin for about an hour, or until the pumpkin is clear and gets some crystal look. Ten minutes before the end you add the lemon cut into circles and the walnuts.
At the end try this delicious dessert, and store what remains of it into jars.
