Mushroom Soup

Winter is the soup season. Nothing's better than a warm soup to welcome you at home after a long day. This soup is really simple and tasty and everyone will like it.


Ingredients:
  • 2 leeks chopped
  • 3 garlic cloves, chopped
  • 300 grams (1,5 cups) mushrooms, sliced
  • 600 ml vegetable soup
  • spices (basil, parsley)
  • some oil
Heat the oil and cook the leeks and garlic for 5 minutes, or until softened. Then add the mushrooms and the spices and cook for 5 more minutes. 
Take the previously prepared vegetable stock and pour into the mushrooms and cook for 5 minutes. 
Remove from the heat, pour into a food processor and blend until smooth.
