Apple Pie

This is absolutely the best apple pie I have made. And I've made a lot :) I made some changes to my granddad's recipe. I used a recipe from a friend. He said that it's his favorite, and now I know why.
Ingredients:
For the crust:
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 1/2 cup butter
  • 7 tablespoons ice cold water
For the filling:
  • 3 big apples (cut in slices)
  • juice from one lemon
  • some cinnamon
  • 3 tablespoons sugar
  • some vanilla extract
Cut the butter and shortening into the flour using a fork.

When it's done it should look like crumbles. Something like this

Add the water and mix until dough is formed. Wrap it in plastic foil and put it in the fridge for at least 30 minutes.

While the dough is chilled you can make the filling. Put the apples in a bowl, add the lemon, sugar, vanilla and cinnamon and mix it well.

Divide the dough in two parts, one bigger and one smaller to cover the pie. Work the dough with a rolling pin.

Put the bigger dough in the pan, put the apples in it and cover it with the remaining dough.
Bake the pie at 200 degrees, for 40 minutes.
After it is baked you can brush the pie with hot jam, and add some confectioner's sugar on top.
