Lemon Muffins!

These sweet-savory lemon muffins are my perfect breakfast. Add your favorite type of coffee and you have the recipe for a perfect beginning of the day. The grated lemon peel adds additional exotic flavor. And they should me made with love, of course :)


  • 2 eggs
  • 200 grams (7 oz) sugar
  • 125 grams (4 oz) butter
  • 180 grams (6 oz) sour cream
  • 50 ml (1/4 cup) milk
  • 1 tablespoon lemon peel (grated)
  • 360 grams flour (12 oz)
  • 2 teaspoons baking powder
  • 60 crams coconut (grated)
For the topping:
  • 100 grams (1,5 oz) sugar
  • 50 ml (1/4 cup) water
  • 80 ml (o,3 oz) lemon juice
  • 2 tablespoons lemon peel

Put the eggs and sugar in a bowl and mix them well with an electric mixer, add the butter, milk, sour cream and mix everything well. Add the dry ingredients: the flour, lemon peel, baking powder and the coconut. Combine everything.
Fill muffin cups 2/3 full. Bake at 200 degrees Celsius (400 F) for 25 minutes)

For the topping, put the water, sugar, lemon juice and lemon peel in a pot and bring it to boil. Cook it until thick sorbet is made.

Top the muffins with the sorbet.
