Dutch Pancakes

It's the the blackberries season and we are lucky to have some blackberry bushes in our garden.

 I picked some this morning, and the first idea I got was... pancakes. But I wanted to make something different so I decided for this German version of a pancake. Something between a pancake, omelette and popover. It's fluffy, light and tasty.

Ingredients:

  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup flour
  • 1 1/2 teaspoons sugar
  • a pinch salt
  • handful of fresh blackberries
  • 1 1/2 tablespoons butter 
Preheat oven to 400 F (200 C). Put the butter in a cast-iron skillet (I used a pie pan) and put it in the oven.
Put the eggs, flour, milk, sugar, salt in a blender and blend everything well for 203 minutes.
Take out the pan, spread the melted butter on all sides of the pan. Add the blackberries on the bottom of the pan and pour the batter on top of them. Bake for 15-20 minutes, or until the pancake is puffed and the edges are golden brown.



When it's ready, you can dust the pancake with powdered sugar. 
Serve with jam, marmalade, or anything you like.
