Light, tasty meal. Perfect for quick summer lunch. Easy to make and delicious.
Ingredients:
- 3 eggs
- 1/2 cup cherry tomatoes
- 1/2 sour cream
- some basil (dried)
- some black pepper
- salt
Beat the eggs with the sour cream, black pepper and salt. set aside.
Half the cherry tomatoes and fry them for a couple of minutes in a frying pan. Lower the heat and pour the eggs over the tomatoes. Cover the pan and cook the eggs for 3 minutes.
Add some basil on top and serve this summer meal.
