Thumbprint Cherry Cookies

It's that time of the year. The cookies season :) I made these in a lent version, I used margarine instead of butter. They turned out a bit flat but still tasty.


For these cookies you need:

  • 1 cup butter, softened ( I used margarine)
  • 2/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cherries (frozen or fresh)
  • sugar for sprinkling
  • 1 cup powdered sugar
  • 3 to 4 teaspoons water


Beat the margarine for about 30 second, then add the sugar and vanilla extract and mix everything well. Add the flour, first mix it with the electric mixer , then use a wooden spoon. Put the dough in the fridge for 1 hour.

Preheat the oven to 200 degrees celsius. Take the dough from the fridge and shape it into small balls. Place each ball into a baking sheet and make an indentation into the center of the ball. Place the cherry in the indentation. Put the cookies in the fridge for 15 minutes before baking.
Sprinkle the cookies with sugar and bake for ten minutes.

For the icing, mix the powder sugar and water and drizzle the cookies.
