Blackberry Pie!

I think that baking is as essential as heating the house when it's cold outside. Nothing is more comforting than a home that smells of something being baked, of cinnamon, of vanilla. This is a simple recipe and it takes very little time to be prepared, but it is tasty and smells like a warm night at home when it's rainy outside :)


For this recipe you need

For the crust:
  • 2 cups flour
  • 1 teaspoon salt
  • 2/3 cup butter
  • 2/3 cup shortening
  • 1 egg yolk
  • 5 tablespoons ice cold water
  • 1 egg white
For the filling
  • 4 cups blackberries (fresh or frozen)
  • 1/2 cup sugar
  • some cinnamon
  • some nutmeg
  • some vanilla
  • some rum
Cut the butter and shortening into the flour using a fork. Add the egg yolk, the salt and the water. Mix until dough is formed. Wrap it in plastic foil and put it in the fridge for at leas 30 minutes. I put the dough onto the pie pan and then I put it in the fridge. Remember to put aside some dough for the pie lattice (my favorite part).
While the dough is in the fridge you can make the filling. It's very simple. You take the blackberries and heat them with the sugar for about 15 minutes. If they are frozen it may take longer. You add anything you like. I added some cinnamon, vanilla, rum and nutmeg.

You take the pie crust from the fridge, you pour the filling and you make the lattice. I learned how to make the lattice from this video. Brush the lattice with egg white so it's golden brown when baked.

Bake the pie at 200 degrees, for 20 minutes.
You can serve it with vanilla ice cream on top. I used sour cream mixed with some confectioners sugar.
